Food Protection Managers

All food handlers are required by law to successfully complete and pass an approved Food Handler Training Course and assessment within 30 Days of Hire. A Food Handler is any individual working with unpackaged food, food equipment, or utensils, or food contact services.

The FDA Food Code requires that the Person in Charge of a Food Service Operation become a Certified Food Protection Manager. This person(s) must always be on-site during the operating hours. This includes Banquet Captains.

A Certified Food Protection Manager must show that he or she has the required knowledge by passing a test from an accredited program. Completing the ServSafe Food Protection Manager Certification Course and passing the exam meets this requirement.

A study from the Center for Disease Control and Prevention, suggests the presence of a Certified Food Protection Manager reduces the risk of a foodborne illness outbreak for an establishment. The study also suggests that it was the distinguishing factor between restaurants that experienced a foodborne illness outbreak and those that had not.
